Does anyone else fancy doing some baking and then realise you’ve not got the right supplies in haha? These brownies are so simple to make and the recipe even has a couple of ingredients you can swap and change depending on what you have to hand. It even has quite a weird secret ingredient!
They are gooey goodness, in less than an hour with very little effort!
Ingredients for your Brownies
- 85g of chocolate – dark is best but a mixture of anything will do!
- 85g Plain Flour
- 25g Cocoa Powder or Hot Chocolate Powder
- 100g Caster Sugar
- 50g Light Brown Sugar
- 1/2 Teaspoon Coffee
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Baking Powder / Bicarbonate of Soda
- 1 Egg
- 60g Crème Fraîche (use greek yoghurt if you don’t have any)
- 100g Mayonnaise
How to make the Brownies
I find it easiest if I start by weighing out all of my ingredients, so skip this step if you prefer to weigh as you go.
PREHEAT YOUR OVEN!180°C or 160°C for a fan oven.
Melt your chocolate over a bain marie or in the microwave. If doing it in the microwave, short bursts are important so you don’t burn your chocolate. Then set it aside and leave it to cool slightly
Whilst your chocolate is cooling, grease and line a square or rectangular baking tin with parchment paper. My tin is 20cm x 15cm and 5cm deep for reference
Combine your flour, cocoa powder and baking soda & sift them all into a bowl.
Use a wooden spoon and stir together both of the sugars into your cooled chocolate
Now add in the coffee powder, vanilla extract and crème fraîche.
Add in 1 tbsp warm water.
Beat your egg and stir into the mayonnaise until smooth and glossy.
Add all of the ingredients together and gently combine.Be very careful not to overmix your brownie batter!
Pour your mixture into your baking tray tin and spread evenly making sure to get it into all of the corners
Pop in your preheated oven and bake for 30 mins.
After 30 minutes put a fork into the middle of your brownies; there may be crumbs on your fork but no wet mixture. Don’t cook too long as your brownies will be dry and no one wants a dry brownie, do they?
Leave your brownies in their tin until they are completely cold. Carefully flip them out onto a cooling rack or chopping board, peel off the parchment and cut into 12 squares.
